MAN do I feel good. As in really, very, no bubble gut, no bloating, so happy to be in my size 10 jeans again GOOD.
MAN do I love the food I get to eat. As in really, very excited that the acorn squash "oatmeal" tastes awesome cold with sliced banana on top and an extra sprinkle of cinnamon, the meatballs, sauce and sauteed chard with red cabbage was amazing and the breakfast chicken patties are delicious LOVE.

I did spend a solid 2.5 hours cooking last night, but I'm set for breakfast and lunch this week, and that makes me very happy. The only wild cards are dinners and I have grass fed ground beef thawing to address that, and plenty of veg on hand to go alongside. I made a ridiculously simple and amazingly tasty raspberry vinaigrette, so I must remember to pick up some organic salad mix. For now I have butter lettuce, carrots, celery and spinach to salad-ize, and that will be just ducky.
I must confess, I don't miss tomatoes, at least not yet. I guess it's been over a month now since I've had any but I'm totally cool with it. In fact, I don't miss much of anything aside from COFFEE. Lord I love coffee. I've tried a few cups of my old standby English Breakfast tea this week and wasn't overly thrilled after the first time. It's okay, I mean I like it and all, but it's not something I can't live without. I'm not sure if I'll ever be able to consume a grande non-fat latte again (because of the pasteurized milk) but I'll bet that I can have some delightful homemade lattes with raw cream. That idea is stuck in my head like bubble gum on the sidewalk! I hope when the time comes (August 26th, now that I've checked) I'll be able to tolerate coffee. My long lost friend!

Other: I had a very large, overly healthy BM late yesterday but I'm still puzzled at the lack-o-BM today. Hmmm...
