Happy Monday! I hate Mondays! I didn't get enough sleep! I'm tired! I'm sort of wired!
I broke into my white cabbage and golden beet kraut* yesterday and it's just as yummy (maybe more so) than the brussel sprout and apple version, mainly because it's just slightly sweeter and doesn't have the bitterness of the sprouts. Not that there's anything wrong with bitter in kraut, I enjoyed every bite of that version, but this one goes much easier with breakfast. Breakfast is a struggle on this eating plan because it's not what you're used to. It's not cereal with milk, juice and toast or eggs with meat and a giant pile of hash browns and an English muffin. Typical breakfasts are filled with unnecessary amounts of starch and, in the case of pancakes, waffles or French toast, way too much sugar as well. Eating a farm style breakfast is the mortal enemy of folks like us, because our bodies can't handle the starches and sugars, and it makes us feel miserable and gain weight.
*I'm calling fermented foods krauts for the sake of simplicity. At home I call them "fermenties", but that's not even a word. Duh!
Okay, down to business. It's going to be a busy day and it's time to start working.
